The El Alto project is focused mostly on the production of table olives for its own table olive processing plant. Del Alto Valle table olive processing facility process 5,000 tonnes of olive per annum. The project also produces olives for the production of olive oil, and owns 25% of the olive oil processing plant Aceitera Del Valle, the first processing plant in South America to process with Amenduni olive oil processing lines.
The Catamarca central valley is characterized by windy conditions, a fact that made the initial stages of the project very difficult. Tree training and pruning methods should have being developed. Other hurdles we needed to cross are late and early frosts that make olive management a very difficult task.
